Seaweed Salad Roll

Seaweed salad roll is a convenient and healthy low-carb, paleo and ketogenic-friendly recipe and super easy to carry in a lunch box.

Seaweed is an excellent source of dietary iodine. As most people in the West are deficient in iodine, it is more important than ever to incorporate iodine-rich seaweed into your everyday diet. A recent study found that not only iodine is vital for thyroid health, but Iodine is also crucial in female fertility. Egg cells require iodine and thyroid hormone to mature and ready for fertilisation.

Ingredients:

  • Sushi seaweed sheet
  • Smoked salmon/salmon strips/fish/chicken
  • Lettuce, shredded
  • Carrot, cut into a long thin thread.
  • Cucumber cut lengthwise
  • Soy sauce (condiment)
  • Seaweed strips (optional)
  • Radish, cut into a long thick thread (optional)
  • Sauerkraut (optional)

Marinade:

  • Salt
  • Apple cider vinegar/Lemon juice
  • Raw honey

Sweet and Sour Nut Sauce (optional):

  • Nut butter (almond/cashew/peanut)
  • Vinegar, honey, salt, water mixture
  • Chilli flakes
  • Warm water/meat stock (add more to liquefy the sauce further)

Instructions:

  1. Marinate the carrot and radish in stages. Massage the carrot and radish in salt first and let it sit for 10 mins. Salt will draw out water and soften the vegetables. Next, give the vegetables a squeeze to drain the liquid and discard the salt water. Then marinate in apple cider vinegar and let it sit in a glass container in the fridge overnight. The next morning, the vinegar will draw out more water and further soften the vegetables. Squeeze to drain the liquid again, but this time safe the vinegar water for use later—finally, marinate in raw honey. Carrot and radish are ready to use. Also, add a little raw honey in the vinegar water. Mix lettuce, carrot and seaweed strips (optional). Mix in a spoonful of sauerkraut (optional).
  2. Take one seaweed sheet and lay it flat diagonally on a large chopping board
  3. Using a kitchen brush, lightly brush the sheet with vinegar honey water to slightly soften the seaweed sheet. Seaweed sheet is quite brittle; without doing so, the sheet will crack when you try to roll it.
  4. Spread the salad mix flat across the seaweed sheet
  5. Lay smoked salmon strips on top of the salad mix
  6. Place a cucumber stick at one end of the seaweed sheet and use it to roll the sheet. Roll the sheet diagonally from one corner to the opposite corner. Fold inward the side corners to create a close wrap. As you roll to the end of the sheet, wet the opposite corner to make it sticky, before closing the loop.
  7. Serve Seaweed Salad Roll with soy sauce
