Seafood Konjac Pad Thai

Serving: 1

Ingredients:

  • Seafood of your choice
  • ½ cup carrot (shredded into strips)
  • ½ cup green onion shoot
  • ½ cup bean sprouts
  • 1 tsp garlic (thinly sliced)
  • 100g konjac noodles (drained of water)
  • Slivered almond (garnish)
  • Coriander leaves (garnish)
  • Lemon wedge (serve)

Marinade:

  • 1 tbsp fish sauce
  • 1 tsp almond butter
  • ½ tsp raw honey
  • ½ tsp tamarind paste
  • Chilli and pepper (optional)

Instructions:

  1. In a small bowl, add all the ingredients for the marinade and the konjac noodles. Cover and marinate the noodles in the fridge overnight.
  2. Cook the seafood as desired and set aside
  3. To make the stir-fry, add the sesame oil into a preheated skillet on medium-high heat. Stir-fry the noodles until somewhat dry.
  4. Reduce heat to medium-low. Add carrots and garlic. Continue to stir-fry with the noodles for one minute and then add the green onion. Keep stirring for another minute and then turn off the heat.
  5. Add bean sprouts and seafood to the skillet. Stir to mix and remove from skillet.
  6. Garnish and serve Seafood Konjac Pad Thai
