Oxtail Stew

This recipe is the perfect hearty and nutritious low carb meal. And by using the tender and flavourful oxtail this dish is extremely delicious and fulfilling as well as perfect for stew.

Servings: 4

Ingredients:

  • 1 kg Oxtail
  • 2 medium Carrot, chopped
  • 2 cups Cabbage, shredded.
  • 2 tbs Thyme leaves
  • ½ Onion, thin strips.

Soup and Spices:

  • 1.5 lt Beef stock
  • 2 tbs Tomato paste
  • 3 Bay leaves
  • 3 Cloves, whole
  • Salt, Pepper to taste.

Instructions:

  1. Combine all the soup and spices ingredients in a large pot. Bring a boil and turn down the heat to simmer. Add Oxtail and simmer for 20 mins. Note: Skip this step if oxtail is already cooked as part of meat stock making process.
  2. Add Carrots into the pot and simmer for 10 mins.
  3. Add Cabbage and thyme into the pot, season, turn the heat off and let it sit for 5 mins.
  4. Serve in a bowl.
