Oxtail Stew Seasoned with Thyme

Imagine having a delicious and warm stew during a cold winter night. Look no further than Oxtail stew, the perfect hearty meal to warm you up in cold winter to ward off cold and flu. Slow-cooked in mouth-watering homemade beef stock and seasoned with aromatic thyme.

Servings: 4

Ingredients:

  • 1 kg oxtail
  • 2 medium carrot, chopped
  • 2 cups cabbage, shredded
  • ½ onion, thin strips
  • 2 tbs thyme leaves

Soup and Spices:

  • 5 lt beef stock
  • 2 tbs tomato paste
  • 3 bay leaves
  • 3 cloves, whole
  • Salt and pepper to taste.

Instructions:

  1. Combine all the soup and spices ingredients in a large pot. Bring a boil and turn down the heat to simmer. Add oxtail and simmer for 20 mins.
    Note: Skip this step if oxtail is already cooked as part of meat stock making process.
  2. Add carrots into the pot and simmer for 10 mins.
  3. Add cabbage and thyme into the pot, season, turn the heat off and let it sit for 5 mins.
  4. Oxtail stew is ready to serve in a bowl
