Mashed Avocado and Egg

Mashed avocado and egg is a delicious super quick breakfast recipe, complete with protein, carb and high in good fats. If you prepare the mash the night before, you can have it the next morning with zero preparation involve.

Serving: 2

Ingredients:

  • 1 medium ripe avocado
  • 2 soft-boiled eggs
  • 2 tbs chopped parsley
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • A rice cake or a slice of sourdough bread
  • 1 tbs grated parmesan cheese (optional)
  • 1 tbs nitrite-free bacon, diced and stir-fried. (optional)

Instructions:

  1. Mash the avocado
  2. Add lemon juice in the avocado mix to prevent blackening (oxidation).
  3. Mash the eggs and combine with avocado.
  4. Mix parsley into the mash
  5. Add salt and pepper to taste
  6. Serve on a rice cake or a slice of sourdough bread

Notes:

  • Prepare the mash the night before or at least boil the eggs the night before and keep them in the fridge. Lemon juice and salt will preserve the avocado and keep it from oxidising, just keep the mash in the fridge.
  • Skip the rice cake and sourdough for keto option. Have it as straight or incorporate this recipe in dishes that call for mashed potato.
