salmon-asparagus

A quick and easy grilled salmon recipe served with sauteed asparagus, the perfect dish for dinner. Grilled salmon and asparagus is an easy dish to make and pack with the heart-healthy Omega-3 fish oil.

Serving: 1

Ingredients:

  • 2 salmon fillets (or 1 large)
  • 1 bunch of asparagus
  • 1 stick shallot, thinly sliced (garnish)
  • 1 wedge lemon (to serve)
  • Olive oil (to serve)
  • Salt and pepper to taste
  • Yogurt-based tartar sauce (optional)

Marinade:

  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar

Instructions:

  1. Peel off the fibrous asparagus stem outer layer.
  2. In a skillet, sautee the asparagus until soft. Do not overcook asparagus; it must remain crunchy. Take asparagus off the skillet and put aside.
  3. Marinade salmon and grill on a skillet until both sides are crusty. Using a cooking brush, dab the marinade sauce on the fish as it cooks.
Note: Take care not to burn. Avoid turning the fish too often; fish will break.
  4. Take salmon off skillet and place on top of asparagus.
  5. Drizzle some olive oil, crack some salt and pepper, garnish, and serve with a wedge of lemon.
  6. Serve yogurt-based tartar sauce alongside with Grilled Salmon and Asparagus (Optional)
