Kale Soup with Egg and Mushroom

Super quick and easy breakfast kale soup recipe. A recipe so simple anyone who can boil water basically can make this dish.

Serving: 1

Ingredients:

  • 500 ml chicken stock/vegetable stock
  • 2 eggs, beaten in a bowl
  • ½ cup mushroom. Halved
  • 2 cups kale (or spinach), roughly chopped
  • ¼ red onion, thinly sliced.
  • Salt and pepper to taste
  • Chicken, diced (optional)
  • ½ medium carrot (optional)

Instructions:

  1. Season stock with salt and pepper and bring to a boil.
  2. Throw in mushroom and pour beaten eggs into the soup, do not stir. Let the stock to go back to a boil and immediately turn down to simmer. Lightly stir the eggs to break it up into chunks. The eggs will cook within seconds.
  3. Throw kale and onion in the pot. Push kale down to submerge in a hot soup. Turn the heat off, close the lid, let it sit for 2 mins, stirring occasionally.
  4. Serve Egg and Kale Soup in a bowl.
