Creamy Avocado Egg Salad

Classic caesar salad recipe modified with health and well-being in mind. Gluten-free, low-carb and keto-friendly with added avocado and egg for healthy fats and protein. Avocado is a rare ingredient to use in a salad, making this recipe quite unique with a combined Mediterranean and South American style.

Servings: 1

Ingredients:

  • 1 handful of salad mix or lettuce, chopped into medium chunks.
  • 4 black olives, whole or halved.
  • ½ avocado, diced.
  • 4 cherry tomatoes, halved.
  • ½ small cucumber, chopped into a half-coin shape.
  • 1 hard-boiled egg, chopped.
  • 2 tbsp yogurt-based tartar sauce
  • Olive oil
  • Shredded cheese (optional)
  • Bacon/chicken/smoked salmon (optional)
  • 1 tbsp sauerkraut (optional)

Instructions:

  1. Mix all ingredients in a large bowl. Add sauerkraut (optional)
  2. Add tartar sauce and mix well
  3. Place on a large plate
  4. Add avocado and egg on top
  5. Drizzle olive oil on top
  6. Creamy avocado egg salad is ready to serve
