Super Simple Kimchi Recipe

Kimchi is one of the tastiest fermented food there is. Store-bought kimchi is not properly fermented neither long enough to have significant health benefits, worse still it is packed inside a plastic jar. The good news is kimchi is so simple to make, just follow the super simple kimchi recipe below. Probiotic-rich fermented food should be eaten often to keep your gut happy and immune system strong.

Ingredients:

  • 1 large Chinese cabbage (Wong bok)
  • 1 small Daikon or 1/2 large Daikon (Asian radish)
  • 6 stalks Shallot
  • 2 tbs Sea salt

Sauce:

  • 1 large Apple
  • 1 Onion
  • 6 tbs Chilli pepper
  • 6 cloves Garlic
  • 2 thumbs Ginger
  • 5 tbs Fish sauce

Instructions:

  1. Split Chinese cabbage into quarters length-wise
  2. Chop the cabbage 4 cm length
  3. Mix sea salt into the cabbage and let sit for 1 hour
  4. While waiting for the cabbage. Slice Daikon into long thin strip or use mandoline.
  5. Cut Shallot into 4 cm length
  6. Blend all the sauce ingredients together, put aside.
  7. Salt will draw moisture out of the cabbage making it soft
  8. Drain the water and wash cabbage to remove the salt. Squeeze the cabbage to drain the water.
  9. Mix cabbage, daikon, shallot and sauce together. Mix well.
  10. Pack kimchi inside glass jars 3/4 full
  11. Using a wooden rolling pin, compress the kimchi tightly removing all air pockets. Ensure kimchi is submerged in its own juice. Kimchi will expand as it ferments. If the jar is packed too high, the juice will spill out of the jar.
  12. Let Kimchi sit in a cool and dark for a minimum of 1 month. 3 months for more potent probiotics action.
