Mushroom and Yogurt Omelette

We all have a problem in the morning. Need to have breakfast but also need to be out the door in 15.  Breakfast is always a rush, who has time for that? Everybody loves omelette for breakfast, it is a timeless classic. This quick mushroom and yogurt omelette takes fewer than ten minutes to pull together. Mushroom and omelette are surprisingly delicious together.

Ingredients:

  • 2 eggs
  • 2 swiss brown mushrooms, chopped.
  • 1 dollop natural unsweetened yogurt
  • Chives, chopped (garnish)
  • Salt and pepper to taste
  • Extra virgin olive oil

Instructions:

  1. Whisk the eggs, seasons with salt and pepper
  2. Lightly oil a small skillet, spread eggs evenly and close the lid. Fry with low heat for 3 minutes.
  3. Slide off omelette on a plate and put aside
  4. Sautee mushroom until soft, season with salt and pepper.
  5. Spread yogurt on top of the omelette. Lightly sprinkle some salt and pepper.
  6. Spread mushroom on top of yogurt
  7. Garnish with chopped chives, drizzle some olive oil.
  8. Mushroom and Yogurt Omelette is ready to serve
