Bacon and Vegetables Crustless Quiche

This recipe will have you a delicious breakfast ready in 10 minutes. It is so easy to make, you only need to make it once and you will remember it forever.

Serving: 1

Ingredients:

  • 2 eggs
  • 1 tbs parmesan cheese, finely grated
  • 1 strip nitrite-free bacon
  • 1/4 carrot, cut into thin strips
  • 1/4 zucchini, cut into thin strips
  • 1 swiss brown mushroom, thinly sliced
  • 1 tbs leek, thinly sliced
  • Salt and pepper to taste
  • Extra virgin olive oil

Instructions:

  1. Whisk the eggs and parmesan cheese together, use a blender for a smoother mix.
  2. Mix the rest of the ingredients, stir for an even mix. Salt and pepper to taste.
  3. Use an egg ring to fry the mixture in low heat until the surface is a light crust. Fry for 3 minutes each side.
  4. Test the quiche by lightly tapping the surface, if it feels firm, the quiche is done.
  5. Serve the Bacon and Vegetables Crustless Quiche with salad. Drizzle some olive oil.

Note:

Prepare the mixture the night before and store in the fridge.
